Cooking Challenges

Cooking is quite a challenge here due to extremely limited
ingredients. There is absolutely no pork available, and even chicken
usually involves purchasing a live chicken and butchering it—and still
ending up with tough meat. The main vegetables available are potatoes,
carrots, onions, tomatoes, and cabbage… as for fruit we mostly eat
oranges and bananas. Dairy products aren’t really sold here, but we
have some butter and cheese stockpiled. We can make milk from powder.
Breads and side dishes are easy enough. We’ve made cinnamon rolls,
boiled artichokes (brought from the big city), carrot & cabbage salad.
We’ve eaten spaghetti, hamburger patties, and taco soup. We even had
onion rings last night. Scrambled or fried eggs are a mainstay. But
main-dish creativity is hard!
So here’s a call for creative recipes for either meatless dishes, or
only beef. All ideas are welcome!

  1. Do you have much access to beans/lentils? Beans over rice makes for an easy meatless meal. To switch up your egg routine, you could try omelets or quiches. If you have access to peanut butter you could make peanut sauce for something a little different with spaghetti noodles. Hope that helps!
